Ingredients: 500g tapioca granules 1 liter coconut milk 1 cup sugar 1 pinch of salt 200ml boiling water 100g shredded coconut (for the dough) Shredded coconut for decoration (optional)
Instructions: In a large bowl, mix the tapioca granules, coconut milk, sugar, and salt. Make sure all the ingredients are well incorporated. Pour the boiling water over the tapioca mixture and mix well. Let it rest for 30 minutes, allowing the tapioca to absorb the liquid and soften. While the tapioca is resting, prepare a round cake pan with a hole in the center. Lightly grease the pan with coconut oil or another vegetable fat. After the tapioca has rested, add the shredded coconut to the dough and mix again. Place the mixture in the prepared pan, pressing lightly to compact. Cover the pan with plastic wrap and refrigerate for at least 4 hours, or until the tapioca is firm.
While the tapioca is in the refrigerator, you can prepare homemade condensed milk. Here's a simple recipe:
Ingredients for homemade condensed milk: 1 cup powdered milk 1/2 cup sugar 1/4 cup boiling water 1 tablespoon butter
Instructions for homemade condensed milk: In a blender, add the powdered milk, sugar, and boiling water. Blend for about 3 minutes, until you have a smooth mixture. Add the butter and blend again for a few seconds.
Transfer to a container and let it cool completely before using.
After the refrigeration time, remove the tapioca couscous from the pan and decorate with shredded coconut, if desired.
